It is best paired with red meat and mature cheese.

Cantine San Giorgio

Cantine San Giorgio is located in the Puglia wine region of Italy. It was initially a wine cooperative founded in 1962 and acquired by Gian Andrea, the owner of Tinazzi winery, in 2012.

The winery uses good quality cement fermenters, the thickness, and texture of which help keep the temperature of the wines in them constant, which has become popular again in recent years. In 2020, a new production winery will be inaugurated in Faggiano (TA), the flagship of modernity and automation, maintaining the quality and tradition of Apulian wines. With the advent of new wineries, ancient tombs have been discovered within the winery's confines, which further links it to the practice and antiquity of the region.

Aglianico

The grape variety is Aglianico, this high-quality wine has a deep color, exudes aromas of chocolate and plum brought by volcanic soil, high tannin content, fine grain, and high acidity, most of which need to be aged for more than 8 years At the same time, it enjoys the reputation of "Barolo in southern Italy". Different wineries have tried their best to tame Aglianico's stronger tannins, which generally depend on the length of fermentation and soaking time, and the changes in aging barrels (large and small barrels and the length of aging time).

There is a production area in Italy known as the "Barolo of Southern Italy," Aglianico del Vulture. Aglianico del Vulture, a sub-region of Basilicata, is one of the three most recognized DOCG-producing regions for Aglianico in southern Italy (upgraded to DOCG in 2011); Aglianico loves heat and dryness. The climate is one of the late-ripening grapes. Aglianico wines from this region are typically high in tannin and full-bodied, with longer aging potential.

Puglia

The Puglia region, located in the east of Italy, has a very long winemaking history and a unique local grape variety. Puglia is the second-largest wine producer in Italy, after Veneto. Puglia has always been considered one of Italy's most important wine regions.

Puglia has a Mediterranean climate, the soil is rich in calcium, and the topsoil is rich in iron, which is very suitable for grape growing. With year-round sunshine and a dry climate, Puglia is the place to be if you're looking for a red wine with ripe fruit and rich aromas.

Most Puglia red wines are ripe, full-bodied, and pair well with spiced meats. Puglia's wine producers all have one thing in common; they focus on producing indigenous grape varieties, such as Negroamaro, Primitivo, and Bombino Nero.
